Green garlic is a young garlic plant that has been pulled from the field to make room for the others to grow big and juicy.  The leaves are much like green onion and the woody stalks are great for flavoring pickles, and of course the bulbs on the bottom contain precious little cloves of the most exciting garlic you'll find.
