How LondonHouse Chicago and Closed Loop Farms Cultivate Local Flavor

In Chicago, culinary inspiration doesn’t stop at the kitchen door. It stretches beyond our rooftop, across neighborhoods, into greenhouses and soil-rich farms where passion and sustainability meet. For more than five years, LondonHouse Chicago has proudly partnered with Closed Loop Farms, a local producer whose greens and edible flowers have become as much a part of our menus as the skyline view from LH Rooftop.

This summer, Executive Chef Liz Sweeney and Executive Pastry Chef Thomas Gorzyca, stepped away from the kitchen to tour Closed Loop Farms' operation. They spent an afternoon with owner Adam Pollack, exploring their growing process and outdoor farm. It was a great reminder of why we choose local, and why this relationship matters to every guest who dines with us.

How Closed Loop Farms Became A Microgreens Empire In Chicago

Adam Pollack was feeling depleted after working in restaurants, and he was eager to put his new farming skills to work. Plus, microgreens grow so quickly in small spaces, he knew he could yield a crop almost immediately.

A decade later, Pollack’s microgreens, along with a colorful array of edible flowers, herbs, lettuces, tomatoes, vegetables and specialty greens, can be found in restaurants and homes across the city via his company, Closed Loop Farms. Every week, the farm makes more than 200 produce deliveries to some 150 restaurants as well as to 50 homes across Chicago. Closed Loop products can also be found at Agora Market, 2134 N. Western Ave. in Bucktown, and Wild Onion Market, 7007 N. Clark St. in Rogers Park.

Had Enough of Canned Goods? Local Growers Team Up to Bring Farmers Market to Your Door

“Along with other local growers and food producers, Pollack has launched what’s essentially a farmers market to go. Customers can order everything from Closed Loop’s Michelin-worthy greens to locally made chocolate bars to pasture-raised, organic-fed meat from some of Closed Loop’s co-tenants at The Plant, a small food business incubator, including Tuanis chocolate, Bike a Bee honey, Xoca cacao fruit soda, Kombuchade sports drinks and Four Letter Word coffee, as well as Pleasant House Pub, Mint Creek Farms, Catalpa Grove, Timberfeast, First Curve Apothecary and Windy City Mushroom.”
